Hi there,
So winter's gone and I've emerged from hibernation to bring you more wonderful happenings in the world of glutenfree travelling.
A few months ago Sheridan, Karsten and I went to Morocco. Not only is it one of the most exotic places I've ever been, I was surprised at how easy it was to travel and find coaliac friendly places to eat.
I also used the free gluten free cards on my iPhone, which you can read about in my report.
We were very excited when Karsten’s article about our trip was published by Arrivals + Departures magazine.
This issue our feature destination is Whistler. Karsten recently went there solo, but was far too busy having fun on the slopes to do his research duties.
Fortunately one of our clients came to the rescue with a great report.
Whistler seems to be the ideal gluten free destination. It's easy to eat out and if you have a condo you can always do your own cooking.
Of course, if I ever get there, I can leave the cooking duties to a husband who's seen all the fun bits anyway.

Steward was not very helpful – suggested he could possibly get some cheese for me from premium economy! Introduction to Whistler: The term "skiing in Canada" has become synonymous with the words "Whistler Blackcomb", one of the sites of the 2010 Winter Olympics. Whistler Blackcomb is one of the largest ski and snowboard resorts in the world with around 8,000 acres of terrain.

Why Whistler? Skiers and snowboarders alike flock to Whistler, British Columbia for skiing in Canada at its best. Even if you don't care much for snow sports you'll enjoy Whistler Village's charm. Great hotels, restaurants, spas and shopping make it a place worth visiting any time of year.
Skiing or snowboarding? Whether you're a seasoned skier, fanatical snowboarder or have never set foot on the white stuff before and just want to try your hand (and feet) at one or the other, Whistler has an amazing range of slopes and terrain that are sure to delight.
Things to see and do Ski runs are not the only tourist attraction in Whistler. The village offers great shopping and dining. Dups - A Mexican takeaway store near the Marketplace at the end of the village. They offer Corn Quesidalas or Tacos for you. All sauces are gluten free. Price range CAD$5 - $15. There are scores of restaurants in Whistler. Basically it’s a case of informing the chef and staff just like in Australia and they'll accommodate. Some of Vancouver’s cheaper restaurants are not always as accommodating, but overall Whistlergets the thumbs up.

Karsten’s report on his recent trip to Whistler "Visiting Whistler is all about having a big time. Initially the village seems enormous and confusing, Upper Village, Lower Village, Blackcomb, Whistler etc.
Soon, however, it comes together and you can get around quite easily on a free shuttle bus that links the community very efficiently..."

Mmm Chocolate Brownies

150g unsalted butter

300g dark chocolate
-
1 1/4 cups (300g) brown sugar, firmly packed

2/3 cup (130g) fine rice flour•

1/4 cup (40g) gluten free cornflour
-
1 tsp xanthan gum (optional)•
-
3 eggs
-
2 tsp vanilla essence
-
1/2 cup (100g) dark chocolate chips
-
1/2 cup (125ml) reduced fat cream
-
100g whole macadamia nuts (optional
*Makes 18 - 20
How to concoct this devilishly delicious treat
-
Pre-heat oven to 160OC. Grease a 19cm x 29cm rectangular shallow baking pan and line with baking paper.

In a medium saucepan, melt butter and chocolate over low heat. Stir until mixture is smooth.

Add sugar, stirring continuously until fully dissolved. Transfer to large bowl and allow to cool to room temperature.

Sift flours and xanthan gum three times into a bowl. Alternatively, mix together with a whisk until well combined.

Stir eggs into chocolate mixture, one at a time.

Add essence and sifted flours, choc chips, cream and macadamia nuts (if desired). Spread mixture into prepared baking pan.

Bake in pre-heated oven for 20 minutes. Cover with foil and bake for another 20-25 minutes.

Remove from oven and allow to cool in pan for 30-40 minutes, or until at room temperature.

Transfer to refrigerator for 2-3 hours until firm, or overnight. Remove from refrigerator, turn out onto cutting board.

Remove greaseproof paper and cut into squares before serving.
